Coconut chicken curry
Serves 4 · 45 minutes
You need
- 2 tbsp KTC Pure Coconut Cooking Oil
- 1 × 400g KTC Coconut Milk
- 1 × 400g KTC Chopped Tomatoes
- 800g boneless chicken thighs
- 1 onion, 2 tsp ginger garlic paste, 2 tbsp curry powder, curry leaves
Method
- Heat the coconut oil and fry the onion and curry leaves until golden. Add the ginger garlic paste and curry powder and cook for 1 minute.
- Add the chicken and brown on all sides, then stir in the tomatoes and simmer for 10 minutes.
- Pour in the coconut milk and simmer for 15 minutes until the chicken is cooked through and the sauce is creamy.
Big-batch curry base
Makes about 8 portions · 1 hour
You need
- 150ml KTC Sunflower Oil
- 2 × 400g KTC Chopped Tomatoes
- 1 tbsp KTC Butter Ghee
- 1kg onions, 2 tbsp ginger garlic paste, 2 tsp turmeric, 2 tsp salt
Method
- Slice the onions and cook slowly in the oil and ghee for 25 to 30 minutes until deep golden.
- Add the ginger garlic paste and turmeric, then the tomatoes and salt. Simmer for 20 minutes.
- Blend smooth. Cool quickly and freeze in portions. Use as the base for any curry.
Lemon rice
Serves 4 · 20 minutes
You need
- 3 tbsp KTC Lemon Juice
- 2 tbsp KTC Sesame Oil or groundnut oil
- 600g cooked, cooled rice
- Mustard seeds, curry leaves, peanuts, turmeric, salt
Method
- Heat the oil and fry the peanuts until golden, then add the mustard seeds and curry leaves.
- Stir in a pinch of turmeric and salt, then the rice.
- Take off the heat and mix through the lemon juice.
Crispy onion bhajis
Makes 12 · 30 minutes
You need
- KTC Groundnut Oil for deep frying
- 3 onions, thinly sliced
- 150g gram flour, 1 tsp chilli powder, 1 tsp cumin seeds, salt, water
Method
- Mix the onions with the flour, spices and salt, then add just enough water to make a thick batter that coats them.
- Heat the oil to about 170°C in a deep, heavy pan. Never fill the pan more than a third full and never leave hot oil unattended.
- Fry spoonfuls for 4 to 5 minutes until deep golden. Drain on kitchen paper.
Weekly hot oil hair treatment (champi)

You need
Method
- Warm 2 to 3 tablespoons of oil gently by standing the bottle in a bowl of warm water. Test it on your wrist first.
- Massage into the scalp with your fingertips for 5 to 10 minutes and comb through to the ends.
- Leave for an hour or overnight, then shampoo out. Patch test any new oil first.

KTC stands for Khera Trading Company. The Khera family started it in the West Midlands in the early 1970s, packing speciality oils like mustard and almond oil for local Asian grocers who couldn't get them anywhere else.
