Chicken biryani
Serves 6 · 1 hour 15 minutes
You need
- 1 pack Shan Biryani Mix
- 500g East End Supreme Basmati
- 2 tbsp Shan Ginger and Garlic Paste
- 1kg chicken on the bone, 3 onions, 3 tomatoes, 250g yoghurt, 150ml oil, salt
Method
- Soak the rice for 30 minutes. Fry the sliced onions in the oil until golden, then add the chicken, ginger garlic paste and Shan Biryani Mix.
- Add the tomatoes and yoghurt and cook until the chicken is tender and the oil separates.
- Boil the rice until three-quarters cooked, drain, and layer over the chicken. Cover tightly and steam on a very low heat for 15 to 20 minutes.
Seekh kebabs
Makes 12 · 40 minutes
You need
- 1 pack Shan Seekh Kabab Masala
- 1 tbsp Shan Ginger and Garlic Paste
- 1kg lamb or beef mince, 1 onion finely chopped, fresh coriander, 2 tbsp oil
Method
- Mix the mince with the masala, ginger garlic paste, onion and coriander. Chill for 30 minutes.
- Shape around skewers with wet hands.
- Grill or bake at 220°C (200°C fan) for 15 to 20 minutes, turning, until cooked through. Serve with chutney and salad.
Butter chicken
Serves 4 · 45 minutes
You need
- 1 pack Shan Butter Chicken mix
- 750g boneless chicken, 250g yoghurt, 200g tomato purée or passata, 100g butter, 150ml cream
Method
- Marinate the chicken in the yoghurt and half the mix for at least 30 minutes.
- Melt the butter, add the tomato and the rest of the mix and cook for 5 minutes.
- Add the chicken, cover and cook for 20 minutes until done. Stir in the cream and simmer for 2 minutes.
Fruit chaat
Serves 6 · 10 minutes
You need
- 1 to 2 tsp Shan Fruit Chaat masala
- 1kg mixed fruit: apple, banana, orange, guava, pomegranate, grapes
- Juice of 1 lemon, 1 tbsp sugar (optional)
Method
- Chop the fruit into bite-sized pieces.
- Sprinkle over the fruit chaat masala, lemon juice and sugar.
- Toss and chill for 15 minutes. A must for iftar.

Shan was started in Karachi in 1981 by Sikandar Sultan as a one-room business making ready-measured spice mixes for traditional Pakistani dishes.
Within a few years it was exporting to the UK, and today Shan boxes are a cupboard staple for desi families around the world.
