Cinnamon, the inner bark of an evergreen tree, is an age-old spice that was once upon a time used to perfume wealthy Romans. We typically harvest our Cinnamon bark in the rainy season then after it dries, it curls into long quills and we then cut into sticks for easy grating. Use our Tropical Sun Cinnamon Sticks in savoury dishes like stews and curries as well as sweet dishes like pies and cakes (either whole or grated).
